Oatmeal That Keeps You Full All Morning



I've struggled to find a morning meal that keeps the kids full of energy for more than an hour or two.  Multigrain pancakes full of secret pureed vegetables fit the bill, but they take too long to make on a school morning.  Cereal is mostly off-limits now, between the wheat-free and corn-free rules we need to follow, and toast is also.  Unfortunately, most of the gluten-free cereals and breads available either have corn in them, or are little more than puffed rice and sugar -- fine for a snack, but not substantial enough to keep the kids going all morning.

We've finally found just the right thing to suit all our needs... and amazingly, everyone will eat it!  It's not often that all three boys like the exact same meal :)  This oatmeal is less of an oatmeal than a fruit salad with a little oats and nuts (for protein) mixed in.  We use maple syrup and cinnamon for a little burst of flavor, and the result (especially when we use Irish oats) is so delicious and satisfying.  And it only takes five minutes to make!

Irish Fruit Oatmeal with Nuts

3 1/2 cups water
2 cups Irish oats (we use Old Wessex, Ltd. Irish-Style Oatmeal)
3 cups mixed berries and bananas
1/4 cup maple syrup
1/4 cup ground pecans or other nut
1 Tbsp cinnamon

Boil the water, then add the oats.  Simmer for about 5 minutes, until the oatmeal has reached desired consistency (don't make it too thick; it's too hard to stir in the fruit).  Meanwhile, prepare four bowls, dividing fruit, nuts, syrup and cinnamon among them equally.  Spoon cooked oatmeal into each bowl and stir lightly to combine.  Serves 4.

Note:  If you are avoiding gluten, make sure to choose certified gluten-free oats.

  1. You just made me hungry for fall (still feels like summer in the South)! I've been drinking breakfast smoothies all summer, and it's time to switch to oatmeal! Love the addition of pecans.
