Roasted Spicy Sweet Potatoes


Happy Halloween!  Looking for an easy dish to make for dinner tonight before the kids go out trick or treating?  Try these yummy Roasted Spicy Sweet Potatoes.  I found the recipe on the website Healthy Vegan Weight Loss while Googling "easy vegan sweet potato recipes."  I made a few minor adjustments and they were a big hit!  You can serve them as an appetizer with a tomato-based sauce, a side dish, or even toss them into salad or pasta.  So versatile ;)

Roasted Spicy Sweet Potatoes

3 large sweet potatoes
1 tsp chili powder
1 tsp cumin
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ancho chili powder

Peel and dice the sweet potatoes.  Combine the spices in a large plastic ziplock bag.  Add potatoes, seal and shake the bag to coat the potatoes.  Dump onto an ungreased baking sheet and spread out into one layer.  Roast at 450 degrees F for 30 minutes, or until slightly browned.  If these are too dry for your taste, toss with a little oil before serving (although we liked it without).
