"Good and Easy Eats" Ebook Review



We've got a lot of dietary restrictions around here, so we get awfully excited whenever we stumble upon new resources for allergy-friendly recipes.  This week, Kim Wilson of Simply Natural Health will launch her new eBook, "Good and Easy Eats," and she was kind enough to provide me with an advance copy to review.  You guys are going to love this one :)

All 106 pages of "Good and Easy Eats" are chock full of gluten-free, dairy-free, egg-free, soy-free, wheat-free and yeast-free recipes.  Yes, you read that right.  Every recipe is free of gluten, dairy, eggs, soy, wheat AND yeast (not or).  That's seventy simple and healthy recipes covering breakfast, lunch, dinner, snacks, desserts and everything in between.

Kim's recipes are clear and easy to follow, and although there are no photos to entice us, the dishes sound wonderful.  Some are familiar, like oatmeal and muesli for breakfast, but others are awfully clever... how about homemade banana milk (dairy free, of course)?  Some of my lunch favorites are a taco salad made with leftover chili, baked corn chips, and an ingenious sunflower seed "sour cream," and charming little lentil cakes with ranch dressing.  I'm getting hungry just typing this!

Have you given up on biscuits and gravy, or pizza for dinner?  Kim will bring the smile back to your face at dinnertime with her allergy-free versions of these popular traditional staples.  Did you know you can make your own non-dairy, spreadable butter?  And next time you want to shock your guests, serve them Kim's Chocolate Meltaways, made with black beans as the base (but no one will be able to tell!).

Kim has been cooking with allergy-friendly and whole foods for 12 years, and as a result her husband's Meniere's Disease was reversed and he lost 100 pounds without reducing his food intake.   She has a wheat allergy herself, and has been dealing with candidiasis as well.  In addition, her son has Asperger's, and all of her family's health issues have benefited from a change in diet.
