Lemony Garlic Broccoli Slaw


Yes, coleslaw is easy, but it's been done.  A lot.  However, the smart folks over at Food Network came up with a clever idea to make coleslaw fun again in this month's Food Network magazine.  In their version (presented as a side dish for Falafel-Crusted Chicken), they thinned some hummus with lemon juice and tossed it with shredded coleslaw mix.  What a brilliant idea!

For my version, I used broccoli slaw (because my kids like it better than cabbage), roasted garlic hummus (for a stronger flavor), and I sprinkled sesame seeds on top for a little visual cue that "this isn't your mom's slaw, baby!"  It's amazing!  The garlicky flavor makes a great contrast to any relatively plain or breaded meat, and the lemon juice replaces the vinegar nicely.  The Food Network chefs added sliced radishes, but I like to let the garlic and lemon be the major flavors.  And best of all, this super-healthy side dish comes together in under five minutes!

Lemony Garlic Broccoli Slaw

1 1-lb. package broccoli slaw (about 4 cups)
6 Tbsp roasted garlic hummus
juice of 1 lemon
2 Tbsp sesame seeds

Mix hummus and lemon juice until smooth.  Toss with broccoli slaw, then top with sesame seeds.
