Spunky Carrot Ginger Soup

I'm rolling out a new label today for my recipes!  I've been doing a lot of reading about the GAPS diet (Gut and Psychology Syndrome) and how it can help mediate behavioral symptoms resulting from food allergies.  I haven't jumped full-bore into following the diet myself (yet), but I'm testing the waters a little bit by seeing what I can make within the rigid boundaries of the introductory stage of the program.

Today's Carrot Ginger Soup will work for stage 1 of the GAPS diet.  It's simple to make and delicious as well!  Over the next few days I'll go back and add a "GAPS-Friendly" label (or tag) to my older recipes, so if you're a GAPS family, you can more easily sort through this site.

This soup is SO easy to make. Just plop everything in a pot, boil it for about 20 minutes, then blend and eat.  I'll bet this tastes even better on the second day when the flavors have had a chance to develop, but I finished mine on the first day!  For fun, you might like to chop up a few hazelnuts for garnish.

Spunky Carrot Ginger Soup

4 cups beef broth (for meatless, substitute veggie broth)
1 Vidalia onion
1 lb carrots
1/2 inch fresh ginger, peeled and shredded

In a large pot over medium-high heat, combine all ingredients.  Your onion should be diced, but don't worry about making very small pieces (you'll be blending the whole thing later).  I didn't peel my carrots, but you are welcome to.  Cut them into about 2" pieces.  Add a little salt if your broth isn't already salty.  Let boil for about 20 minutes, or until carrots are soft.  Cool for 10 minutes, then blend with an immersion blender.  Enjoy!

  1. Some of my family went on the diet in June. We didn't do much of the organic stuff because it is way to expensive for us. But, my oldest brother (who went on the diet for food problems) has felt sooooo much better! He was already gluten and corn free before the diet, but his legs started aching again (which is why we removed the gluten and corn in the first place). Now he has no desire to go back, he would be happy to be on the diet his entire life! It really has benefited him a lot.

  7. I love carrot and ginger soup but I've never tried making it myself. I've only ever had the commercially prepared variety. I've been dealing with a very unhappy gut lately and have skirted around the edges of GAPS or SCD diets. Not ready to commit to either but I'm certainly going to have to try this soup!

  8. Having walked my dd through all the stages of GAPs I can tell you this would be a great addition to Intro. My dd has found some significant healing in the past 9 months she has been on the GAPS diet.
