Garlic Kale & Potato Soup

Garlic Kale Potato Soup
Mondays are a good night for an easy dinner.  At our house, we don't get home from our afternoon activities until 5:00pm, so a dish we can whip up quickly is a must.  Ironically, it is our allergy shots (a 40-minute drive from home) that keep us out so late!

This soup is so simple to make, and layered with subtle flavors.  The significant amount of onion and garlic gives the soup a mellow base, the bitter kale plays off the creamy potatoes, and the almost-raw tomatoes bring the whole dish together with a nice, acidic kick.  It is the tomatoes that make this soup special, so use the best ones you can get your hands on.  Heirloom tomatoes are delicious - the firmer the better for this dish.

Garlic Kale & Potato Soup

8 cups vegetable broth
3 Tbsp minced garlic
1 large onion, diced
1 Tbsp olive oil
3 large potatoes, peeled and diced
1 bunch kale, chopped
1 medium tomato
salt & pepper
pinch of rosemary & thyme

Saute garlic and onion in oil 5 minutes.  Add broth, kale, and potatoes, and bring to a boil.  Simmer until potatoes are soft, about 20 minutes.  Add spices, then serve with diced tomatoes on top.  The tomatoes are raw when you set them on the soup, but soften up as they sit in the heat.  You don't want them to be cooked, as their raw acidity is necessary to liven up the soup.
