Today's feature is from Maple Hill 101. Daisy has made these adorable Mini Meatloaves without gluten, dairy or eggs. I happen to be a HUGE fan of meatloaf sandwiches, and I am wishing I had somewhere to go where I'd need a lunchbox so I can make myself some with these! This week I am sharing three great recipes:
(1) Pumpkin Spiced Teff Pancakes with Vegan Maple Whipped Cream (allergy friendly - free of the top allergens: dairy, eggs, gluten, soy, peanuts, tree nuts (it does contain coconut, but remember that coconut is a seed!)
(2) Chicken “Zoodle” Soup (SCD Friendly) - great to pack for a snow day lunch!
(3) Homemade Sunbutter (sunflower seed butter)
