St. Patrick's Pot Roast with Guinness
1 pot roast (your choice of cut)
1 bottle Guinness beer
1 cup brewed coffee
2 cups water
2 Tbsp balsamic vinegar
2 bay leaves
2 Tbsp garlic, minced
1 onion, quartered
1 cup baby carrots
Season the meat with salt and pepper and sear it on all sides in a Dutch oven on your stove. Transfer to slow cooker. Add the rest of the ingredients, and cook on high for 6 - 8 hours. (Alternatively, you can cook the whole thing on the stove in the Dutch oven for 3 hours, covered.)
