Mashed Cauliflower with Garlic & Green Onions

Tired of the same old mashed potatoes, or are you avoiding nightshades and need a new pseudo-starchy side dish?  Mashed cauliflower is amazingly easy to make (if you have a food processor), and it will trick you into thinking you're having a starch with your protein when actually you are feeding yourself a bundle of great nutrients and hardly any carbs at all!  This recipe is adapted from Detoxinista, where you can find a whole lot more wonderful recipes.

Mashed Cauliflower

1 head cauliflower
1 bunch green onions
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp thyme

Cut the cauliflower into florets (they don't have to be super small) and steam them until tender (I used my microwave - add 2 tsp water and cook for 6 minutes).  Transfer to a food processor, add the rest of the ingredients, and process until smooth.

Usually, no additional liquid is necessary.  You can see from the photo that the cauliflower will not be as pasty as mashed potatoes, but amazingly, it does taste as though there is butter on it!
