Blueberry Cinnamon Mug Muffin (GF, grain free, refined sugar free)

Blueberry Cinnamon Mug Muffin
This is the Cinderella of breakfast muffins, this crazy little gluten-free baby.  Made in a mug in the microwave, this one-serving powerhouse is gluten-free, grain-free, and refined-sugar free, and contains 14 yummy grams of protein!  Yes, it's kind of ugly, but it tastes so good :)  The flavor is reminiscent of a bran muffin, and of course it can be adjusted by changing the type of jam you include.  Best of all, it takes less than five minutes to make, start to finish!

Blueberry Cinnamon Mug Muffin

1/4 cup flax meal
3/4 tsp baking powder
2 tsp cinnamon
1 egg
1/2 tsp vanilla
1 tsp clarified butter or ghee, melted
1/4 cup blueberry jam (no sugar added)

In a microwave-safe mug, mix together the flax, baking powder and cinnamon.  Add the rest of the ingredients and mix very well with a fork, paying particular attention to the angle between the floor of the mug and the walls (the dry ingredients can stick here).  Heat for one minute in the microwave on high power.  Let sit one minute, then tip out onto a plate.  Let cool one more minute, and serve.  The texture will become more dry as the muffin sits, which is a good thing.

    1. Hi Amber! Hope you are doing well :) I'll bet you could bake this in the regular oven. I saw a different recipe for a single serving English muffin that was supposed to be microwaved for 1 minute, and they suggested an alternative baking time of 15-20 minutes at 350 degrees in a regular oven. Not sure if you'd need to change the mug to maybe a tiny springform pan?? Good luck! ~Lisa
