I Tried It: King Arthur Gluten Free Muffin Mix

King Arthur Flour offers several specialty, gluten-free items.  I've baked with the Baking Mix several times now and have always been happy with the texture of my final product.  Today I tried the Muffin Mix for the first time, and wow did these get big!  I think I'm used to coconut flour muffins now, because these seem amazingly light and fluffy.  

They were easy to make - just add your own eggs, oil, milk (I used hemp) and blueberries (I used frozen).  The muffins rose beautifully, and taste nice and sweet.  The mix does contain corn starch, for those who are avoiding corn, and of course, this is not an egg-free dish.  Next time I'll try it with flax meal and see what happens!

  1. How funny! I have tried this mix too and really loved it. You know, actually, it inspired me to finally start baking! :-) Look forward to how the flax egg turns out.
