What's For Dinner Tonight?

Chicken Souvlaki with Zaatar Rub and Onions

Chilled Cucumber Garlic "Yogurt" Soup

Greek Salad (DF)

This was a simple meal to make.  I brined the chicken (soaked the raw chicken in water & kosher salt for 1 hour before skewering and grilling) and added a ready-made Zaatar rub.  No peppers on the kebab because I'm following the Paleo Autoimmune Protocol for a while.

The soup, a Middle Eastern standard that is usually made with yogurt, came together in the food processor with coconut milk (canned), unpeeled cucumbers, minced garlic and salt.

For the salad I actually used a vegan Caesar dressing (recipe below) and just added chopped tomatoes and Kalamata olives (I ate around the tomatoes!).  The anchovies and lemon in the dressing are a great substitute for the saltiness of the feta cheese that you would normally find in a Greek salad.  Loved this dinner!

The Caesar dressing is from Mickey Trescott's Autoimmune Paleo cookbook, and you just throw all this stuff in a blender or food processor (for mine, I used canned coconut milk) (see below)

3/4 cup fine shredded coconut
3/4 cup filtered water or coconut milk 

1/3 cup extra-virgin olive oil
2 cloves garlic
1 lemon, juiced
1/4 teaspoon salt
2 anchovy fillets
