Armenian Stuffed Peppers



My husband is a huge fan of stuffed peppers... the traditional Armenian recipe brings back happy childhood memories for him.  As he is now vegan, we needed to make a change to our usual stuffing recipe, which included ground beef (or lamb).  I found that eliminating the beef and changing the bulghur to farro or brown rice worked well.  The texture of the filling is a little lighter, but the taste is very similar to the original, as the cooking liquid (used later as a sauce) has very strong flavors of tomato and lemon, which tended to overpower the meat flavor anyway.  The recipe here is for a small batch of just three peppers, as we have two members of the family who boycott cooked peppers... feel free to double it for a larger family.

Stuffed Peppers Armenian Style

1 cup cooked farro or brown rice
3 green peppers
1/2 bunch green onion, or 1/2 white onion, chopped
24 oz tomato sauce (I use it from a jar*)
1 can (or jar) of tomato paste
2 Tbsp fresh dill, snipped
1 tsp red pepper
juice of 1 lemon
water as necessary

Cut the tops off peppers and reserve.  Take seeds out and sit peppers in a small saucepan.  Choose a pan that's small enough to hold the peppers upright as they cook.  Mix together farro (or rice), chopped onion, tomato paste, dill, and red pepper, plus the chopped tops of the green peppers. Add salt and pepper to taste.  Stuff the peppers with the grain mixture; there may be a little left over depending on the size of your peppers.  Pour the tomato sauce into the pan; thin with water if the sauce does not come 3/4 of the way up the side of the peppers.  Pour the lemon juice over all the peppers, and into the tomato sauce.  Boil, uncovered, then reduce heat and simmer, covered, for about 20 - 30 minutes.  Serve in a bowl with several ladles-ful of sauce.

* Note: For those with food mold allergies, canned tomato products are banned.  We've been using tomato sauce and paste from a jar as an alternative.
