Black and Blue Crumble



We are having so much fun enjoying the last of summer's berries!  Traditionally, crumble desserts are made with a mixture of flour and sugar.  We adjusted our recipe so it's allergy-free.... our crumble is gluten-free (use certified gluten-free oats and rice flour), dairy-free (coconut oil instead of butter), and even has a bit of healthy protein (in the pecans).  Warm desserts are such a treat, and this one is healthy as well!

Black and Blue Crumble

1 pint blackberries
1/2 pint blueberries
1 Tbsp + 6 Tbsp turbinado sugar
1 Tbsp + 4 Tbsp coconut oil
3/4 cup Irish oats
3/4 cup pecans
4 Tbsp rice flour
1 tsp vanilla
pinch of salt

Spread the berries at the bottom of an 8x8" (or similar) casserole dish.  Sprinkle with 1 Tbsp sugar and dot with 1 Tbsp coconut oil.

In a food processor, combine oats, pecans, flour, remaining sugar, remaining coconut oil, vanilla and salt.  Spread this mixture over the berries and bake for 15 - 20 minutes at 350 degrees Fahrenheit.  Serve warm.
