Teatime Blueberry Soup


Cold fruit soup just sounds so dainty to me!  I love the image of graceful ladies sitting down around a tiny round table laid carefully with linens, laces and china.  This is one of my mother-in-law's bowls that she inherited from some of her older relatives.  The charming little flowers around the edge melt me every time.  The pink glass teacup is another cherished piece of her collection... I had wanted to serve the soup in it originally, but the dark blue of the soup just overwhelmed the delicate color of the cup.

Regardless of its strong color, the taste of this blueberry soup is unexpectedly complex and refined.  The combination of the orange juice, maple syrup and cinnamon puts me in mind of the holidays, or an elegant chai tea.  The recipe couldn't be easier... just whir everything together in your blender.  The centers of the blueberries cause the final product to gel naturally, which is why this is a soup and not a smoothie.  You MUST eat it with a spoon!


Teatime Blueberry Soup

1 pint blueberries
1/2 cup orange juice
1/2 cup rice milk
1/4 cup maple syrup
1 tsp. cinnamon

Pour everything into a blender and process for a minute.  There will be solids left in your soup, but they are small enough that they won't cause a problem.  Chill and serve in small bowls.  Garnish with fresh mint leaves if you like.  Serves 4 to 6, depending on bowl size.
