These chocolate-dipped dried apricots look just like acorns, and their orange and brown color scheme fits perfectly into my autumn decor. This cute little dessert couldn't be easier... they only take a few minutes to put together, and you don't even have to turn on your oven!
I used allergy-free chocolate chips for my dip, and to save dishes I microwaved them right in a glass measuring cup. I love to pull out my vintage nut grinder, but you can chop yours any way you like. Instead of pistachios, you might like to try pecans or even hazelnuts.
Don't store these in the refrigerator -- the chocolate will get a white haze on it. They can be left to dry right out on the counter. That's it! So easy :)
Chocolate Dipped Apricot "Acorns" with Pistachios
16 oz container of dried apricots
1 cup chocolate chips
1/2 cup chopped pistachios
Melt the chocolate chips your favorite way. I used a glass measuring cup in the microwave, stirring after every 30 seconds of heating. Dip each apricot halfway into the melted chocolate, then dip into chopped nuts. Set on a plate (covered with wax paper if you like) to dry -- about 30 minutes. Do not refrigerate.
