Welcome to our weekly Friday feature, Allergy Friendly Lunchbox Love! This link party is specifically for your dishes that will travel well in a lunchbox, and if they're free of some (or all) of the top eight food allergens, that's even better :)
Today I've brought back one of my favorite salads, a Middle Eastern Fattoush Salad. I posted this one back in August (can you tell by the plating?), but it's a great year-round dish that has a delicious, assertive flavor combining cumin and lemon. It's topped with toasted tortilla strips, but if you are avoiding gluten, you can substitute your favorite gluten-free bread or croutons. Make sure to pack the individual elements of your salad separately, then toss just before eating (but you knew that, didn't you?).
Our featured submission from last week's blog hop is an allergy-free French bread from Allergy Free Cooking. Gluten free bread is tricky enough, but this recipe is also dairy free and egg free! Now that's hard to do! Sandwiches for the multiple-food-allergic family are very rarely on the menu, so finding this recipe was so exciting.
