Allergy-Friendly Macaroons (egg free, dairy free, soy free, gluten free)


I love macaroons, but they typically contain egg whites to bind the coconut together.  Imagine my surprise when I came across a recipe for an egg-free macaroon, and it wasn't even in an allergy cookbook!  In "The Tea Table" by Shelley and Bruce Richardson, I found an easy recipe for their signature macaroons using sweetened condensed milk as a binder.  Since we can't eat milk either, I thought I'd try substituting caramelized coconut milk instead.  It worked!  The drizzled chocolate over the top also helps to hold these fragile cookies together, and the taste is just wonderful.

Allergy-Free Macaroons

1 14 oz. can coconut milk
1 cup brown rice syrup
2 tsp vanilla
10 oz. coconut, flaked
1/4 cup white rice flour
1 cup allergy-friendly chocolate chips
1 tsp. coconut oil

Begin by caramelizing the coconut milk.  Mix with brown rice syrup and heat over medium-low heat until thickened, about 30 minutes.  Remove from heat and add vanilla.  Cool at least 10 minutes (I popped my pan right in the fridge to speed it up).

In a large mixing bowl, stir together coconut and flour.  Add the coconut milk mixture and blend well.  Scoop by tablespoons, and press with free hand to form a ball (actually more like an egg shape).  Set carefully on foil-lined cookie sheets, then bake at 350 degrees F for about 30 minutes, or until browned on top.  As ovens vary, check these often toward the end of the baking time.  The sheet I had in the middle of the oven browned in about 25 minutes, while the sheet at the bottom of the oven took an additional 10 minutes.  Let cool before removing from tray.

Meanwhile, combine chocolate chips and coconut oil in a glass measuring cup.  Microwave until melted, about 1.5 minutes, stirring every 30 seconds.  Drizzle warm chocolate over cookies and let cool.  Makes about 30 cookies.
