Crockpot Orange Chicken (GF, DF, soy free)

Crockpot Orange Chicken
It's getting chilly out, which means it's crockpot season again!  This simple recipe takes just a few minutes to prepare, then it makes your kitchen smell wonderful for hours until dinnertime.  While it doesn't taste exactly like its Chinese-restaurant namesake, this chicken is extremely moist and flavorful. We served it over brown rice with some salty broiled asparagus for contrast, and it was a huge hit with the fussy eaters!  Although the photo looks a bit like the chicken pieces are very fatty, this is not the case.  There is no fat on these -- I used skinless, boneless chicken breasts -- and the photo actually shows the thick sauce that remains on the chicken after it has been slow cooked for several hours.



Crockpot Orange Chicken

1 pkg boneless chicken breasts (about 2 lbs)
½ cup oil (your choice)
1 cup sorghum flour (or your favorite GF flour)
1 tsp salt
½ tsp pepper
1 tsp Asian seasoning* (optional)
1 cup orange juice
2 Tbsp balsamic vinegar
4 Tbsp ketchup
4 Tbsp brown sugar (or demerara sugar)

Cut the chicken into 1” cubes.  Mix together flour, salt, pepper, and seasoning (if desired), then toss the chicken in the flour mixture.  Cook in oil in a large frying pan over medium heat until browned on all sides. (Chicken does not need to cook through.)  Transfer to crock pot.

Meanwhile, mix together orange juice, vinegar, ketchup and brown sugar in a small bowl.  Pour over cooked chicken in crock pot and toss to coat.  Cook on high for 2.5 - 3 hours or low for 4 - 6 hours (this is better).  Serve over brown rice. 


* I used Emeril’s Asian seasoning, which contains salt, spices, crushed red pepper, onion, garlic and mustard powder.

  7. It is easy and simple to make. Sauce is adequately orange. I couldn't find the Asian seasonings but improvised. I also added some zest.
