Buffalo Turkey Meatballs (GF, DF)

Buffalo Turkey Meatballs
Need a little heat to spice up your winter evening?  These Buffalo Turkey Meatballs can be made as mild or as hot as you like, and they're healthy to boot.  Traditional Buffalo Chicken Wings are fried, then loaded with buttery sauce -- can you say high fat and calories?  These turkey meatballs are not only low fat, but they are made without gluten or dairy, so your food allergic family or guests can enjoy  them without fear.  Perfect for a game day appetizer too!

Buffalo Turkey Meatballs

2 lbs ground turkey
1 cup GF breadcrumbs
1/2 cup rice milk
1 tsp garlic powder or 1 Tbsp minced garlic

1/4 cup hot sauce
1/2 cup coconut spread
1 Tbsp white wine vinegar

Mix breadcrumbs with rice milk to soften.  Combine with ground turkey, garlic, and salt & pepper to taste.  Roll into 20 meatballs and bake on a parchment-covered baking sheet at 350 degrees for about 15 minutes, or until brown. You can turn these over halfway through if you like.

Meanwhile, heat together the hot sauce and coconut spread in a small saucepan over medium-low heat. Mix well to combine, remove from heat, and add vinegar.  Adjust proportions if you like your buffalo sauce spicier or milder.

When meatballs are cooked, toss them in the sauce until they are covered on all sides.  Serve over brown rice, with raw carrot and celery sticks on the side.

  1. It's a butter substitute that's kind of like coconut oil (which you could probably use in its place). I use a brand called Earth Balance.

  5. I have not used coconut spread before. Exactly where in the grocery store would I find this spread? It is made my Earth Balance?

    This recipe sounds so simple and elegant. I'm in need of some new ideas these days

    1. Yes, I use Earth Balance coconut spread, which is a butter substitute. I find mine near the butter in the dairy section. Hope you like the meatballs!
