Sweet Potato Hash with Bacon & Onions

Sweet Potato Hash
What a great way to start your morning -- savory sweet potato hash served with a homemade chicken sausage patty on the side!  It's tasty, filling, grain free, egg free, paleo (if you're leaning in that direction) and full of great vitamins and minerals.  Plus, the smell of the hash cooking fills the house with amazing aromas!

Sweet Potato Hash

4 sweet potatoes
2 onions
6 strips of bacon
2 Tbsp olive oil
2 Tbsp garam masala spice
salt and pepper to taste

Peel the potatoes and cut into 1" dice.  Cover two baking sheets with aluminum foil or parchment paper, and toss the potatoes on the sheets in the oil and spice.  Roast for 30 - 45 minutes at 375 degrees.

Meanwhile, dice the onion and bacon and cook in a large frying pan over medium heat.  Set aside.

When the potatoes are done, toss with the bacon and onion mixture.  You can eat this right away, or make ahead and keep in the fridge to eat later.  Tastes great the second day!
