Crockpot Beef & Sweet Potato Stew

Crockpot Beef & Sweet Potato Stew
Aren't crockpots the best invention ever?  This dish turned out to be so sweet and delicious, and it was hardly any work at all!  You can dump everything into the crockpot in the morning and have dinner ready that evening, or if you're going to be around during the cooking time, you can wait and add the sweet potatoes halfway through the cooking time so they don't get too mushy.  (I like them mushy, but my husband wasn't a fan!)

The secret ingredients here are beer and coconut milk.  What a yummy combination! You won't believe it 'til you try it.


Crockpot Beef & Sweet Potato Stew

2 lbs ground beef
2 sweet potatoes, cut in 1" chunks
1 onion, diced
1 1/2 cups chicken broth
1 bottle beer (optional - see below)
1 can coconut milk
1/3 cup date sugar
1 bunch green onions, chopped

Brown the ground beef in a medium frying pan on the stove over medium heat, then transfer to the crockpot.  In the same pan, soften the onion for about 3 - 5 minutes, then transfer that to the crockpot.

Add the broth, beer and sweet potatoes, and start cooking on low for 6 hours.  (Or, you can reserve the sweet potatoes and add them after 3 hours.  Your choice.)

30 minutes before the end of your cooking time, add the coconut milk, sugar and green onions.  Serve warm, or tastes great the second day.

(Note: This can be made without the beer - just add a bit more chicken broth instead.  Or, here are ten gluten-free beers to try.)

    1. Actually, I didn't use gluten-free beer, and paid for my mistake later! I've added a link in the notes to a list of ten gluten-free beers that are supposed to actually taste good :)
