Horseradish Zucchini Fries (Baked)

Horseradish Zucchini Fries
Are you avoiding fried foods?  Nightshade vegetables?  Missing your traditional French fries?  These zucchini fries are not only healthy (baked, not fried), they are a great way to encourage your children to eat green veggies.  My teenager ate not only his serving, but his brother's as well, and asked for more!

This preparation uses a mustard that already has horseradish in it, but you can certainly adapt this recipe to combine yellow mustard and horseradish, or even mustard and honey.

The breading method will not result in beautiful fries -- the mustard tends to clump -- but the flavor is delicious.


Horseradish Zucchini Fries

2 medium zucchini
1/2 cup horseradish mustard
1/2 cup olive oil
2 cups GF bread crumbs
1/2 tsp salt
1/2 tsp garlic powder or onion powder

Slice each zucchini into fry shapes (I made nine slices in each squash -- three down one way, rotate the zucchini 1/4 turn, then three down again.  Then I cut each slice in half for shorter fries.).

In a medium bowl, mix together the mustard and olive oil.  Prepare the bread crumbs in a second bowl with the salt and garlic powder.  Line a baking sheet with parchment paper (this is important).

Dip each fry into the mustard mixture, then the bread crumbs.  You may need to rub each fry with your fingers to distribute the mustard before you dip into the bread crumbs.  Line the fries up on the baking sheet and bake at 400 degrees for about 15 - 20 minutes, or until the zucchini is soft and the coating has browned.  You don't need to turn these over during the cooking time, but keep an eye on your oven to prevent burning.  Serve warm.

  1. Yum. I use a honey mustard mixture to coat baked chicken, and now you've got me thinking about doing something similar with zucchini!

    Quick question: do you have any plans to bring "Lunchbox Love" back? I'd love to see it again!

    1. Ah, Lunchbox Love! I had stopped that when I started packing up to move, and honestly kind of forgot about it :) I think a year off is plenty of time for me to get my ducks in a row, don't you? Thanks for bringing it back to the top of my To-Do list -- I'll get it going next Friday again, how's that? I'm glad it was helpful to someone!!
