What's For Dinner Tonight?


Zucchini "Pasta" Carbonara


This dish didn't make it as an official recipe for the blog, because it's kind of ugly.  I really need one of those little machines that turns zucchini into noodles!  The sauce isn't a true carbonara, because I can't use eggs, but it was a nice creamy sauce made with coconut milk, garlic, and prosciutto.  I have to say, I liked this dinner, but the kids really didn't!  Oh well, more leftovers for lunch for me :)
