Crockpot Orange
Chicken
1 pkg boneless chicken breasts (about 2 lbs)
½ cup oil (your choice)
1 cup sorghum flour (or your favorite GF flour)
1 tsp salt
½ tsp pepper
1 tsp Asian seasoning* (optional)
1 cup orange juice
2 Tbsp balsamic vinegar
4 Tbsp ketchup
4 Tbsp brown sugar (or demerara sugar)
Cut the chicken into 1” cubes. Mix together flour, salt, pepper, and
seasoning (if desired), then toss the chicken in the flour mixture. Cook in oil in a large frying pan over medium
heat until browned on all sides. (Chicken does not need to cook through.) Transfer to crock pot.
Meanwhile, mix together orange juice, vinegar, ketchup and
brown sugar in a small bowl. Pour over
cooked chicken in crock pot and toss to coat. Cook on
high for 2.5 - 3 hours or low for 4 - 6 hours (this is better). Serve over brown rice.
* I used Emeril’s Asian seasoning, which contains salt,
spices, crushed red pepper, onion, garlic and mustard powder.

That looks good and Bob loves chicken so I see some orange chicken in my future.

ReplyDeleteIt is easy and simple to make. Sauce is adequately orange. I couldn't find the Asian seasonings but improvised. I also added some zest.
