Blueberry Cinnamon Mug Muffin
1/4 cup flax meal
3/4 tsp baking powder
2 tsp cinnamon
1 egg
1/2 tsp vanilla
1 tsp clarified butter or ghee, melted
1/4 cup blueberry jam (no sugar added)
In a microwave-safe mug, mix together the flax, baking powder and cinnamon. Add the rest of the ingredients and mix very well with a fork, paying particular attention to the angle between the floor of the mug and the walls (the dry ingredients can stick here). Heat for one minute in the microwave on high power. Let sit one minute, then tip out onto a plate. Let cool one more minute, and serve. The texture will become more dry as the muffin sits, which is a good thing.

This is such a great, simple recipe. If I had a microwave, I would totally make this. Looks so yummy!!

Hi Amber! Hope you are doing well :) I'll bet you could bake this in the regular oven. I saw a different recipe for a single serving English muffin that was supposed to be microwaved for 1 minute, and they suggested an alternative baking time of 15-20 minutes at 350 degrees in a regular oven. Not sure if you'd need to change the mug to maybe a tiny springform pan?? Good luck! ~Lisa
