Allergy Friendly Lunchbox Love ... 2/17/12

Welcome to our weekly Friday feature, Allergy Friendly Lunchbox Love!  This link party is specifically for your dishes that will travel well in a lunchbox, and if they're free of some (or all) of the top eight food allergens, that's even better :)  We all need some inspiration when it comes time to fill that lunchbox week after week!

Today's feature is from Tasty Yummies, and is free of just about everything you can think of except for taste :)  These No-Bake Oatmeal Chia Chocolate Chip Cookie Balls are dairy-free, egg-free, refined sugar-free, corn-free, soy-free, raw and vegan.  Beth describes herself as a gluten-free, conscientious omnivore (I like that!).  Click on the title above the photo to jump to her site and read all the details for the cookie balls.

  1. Mmmmmm, those cookies look incredible! I've been toting these heart-shaped Curried Lentil Love Burgers to school in my lunch box all week. I think I like them better over a salad instead of the traditional bun. Have a great weekend!

    I shared my Raspberry Pancakes recipe this week. I often put a few pancakes into a bag and my husband takes several pancakes for breakfast or lunch to warm up at work.

  5. Thank you for hosting! Lots of great ideas are posted already... Today I shared two recipes. The first is for gluten-free chocolate chip muffins. Yogurt in the muffins keeps them moist.

    Peanut Butter Omega Cookies have half of the butter replaced with flaxseed meal, and added oatmeal for fiber. They are easily made gluten free as well. We store them in the freezer.

  7. This week I shared an opus on sugar and sweeteners. There are over 25 different sweeteners on the market today and this post is a breakdown on all of them and the latest science on their effect on our health. Since we do so much ingredient substitution at our house, knowing which sweeteners work for what helps us a lot!
