Sweet Potato Soup |
In case you are interested, I used these recipes for my original honey/apple ham and cider sweet potatoes. Love that Pinterest!
Sweet Potato Soup with Ham and Cider
2 cups leftover sweet potatoes
2 cups leftover ham
3 cups chicken broth
1 cup cider
Run your sweet potatoes and ham through the food processor to mash them to a pulp. Transfer to a large stock pot and add the broth and cider. Heat over medium, stirring well, until the potatoes are no longer a paste and the soup is warm. You can adjust the proportions of this to suit the amount of leftovers you have -- just keep adding liquid to your potato/ham pulp until it's nice and smooth. Enjoy!
